Nolechek's uncured bacon is a TRUE NO NITRITE product that uses a Mediterranean blend of fruit and spice extracts to create a product that we are proud to stand behind. This product is an alternative to traditionally cured or 'naturally uncured' products that truthfully contains no nitrites.

Nolechek’s Master Meat Crafter

Nolechek’s is proud to have Chad Nolechek, a Master Meat Crafter, on our team. Offered by the University of Wisconsin-Madison Meat Science program, participants spend two years learning various elements of meat science. Chad brings with him a well-rounded, in-depth and comprehensive understanding of the science behind making sausage, which allows Nolechek’s to continue crafting quality product into the fourth generation.
